So this recipe was originally a fail…I had made mini protein spice cupcakes but the protein powder in them made them flop. SO, I decided to put the failed cupcakes to use and make Cake Batter Nice Cream and a Cupcake Yogurt Bowl (swipe to see).
Cake Batter Nice Cream—-
6 frozen bananas + 2 tbsp coconut creamer + 1 scoop vitalproteins collagen creamer + 1/2 cup silk soy milk + 1/4 cup cashew butter + 1 tsp vanilla extract —> blend until smooth + add in 13 chopped mini protein spice cupcakes
Cupcake Yogurt Bowl—-
1 cup siggisdairy strawberry SKYR + 1/2 cup frozen blueberries + 3 mini protein spice cupcakes
Mini Cinnamon Spice Cupcakes
– 1/2 cup bobsredmill gluten free 1-1 flour + 2 scoops Lean and Fit Vanilla Pea Protein + 2 tsp spices + 1 egg + 1 tbsp melted butter + 4 tsp maple flakes + 1/6 cup fruitsationscanada applesauce + 3/4 cup silk soy milk —-> preheat oven to 350 and mix all ingredients together. Put the batter into mini muffin liners and cook for 17-20 mins (time may vary depending on protein powder). Top w/ coconut whipped cream.
